Broccoli Toast—My Attempt...

Goddaughter Elvira did serve such delicious Broccoli Toast while I was in Limburg.
Sure, she is a Lady Chef and an excellent one!
This is what Evira served my best friend Ellie (her Mom) and me...
So, once back home in the USA, I did ask Elvira for the recipe.

BROCCOLI TOAST

Ingredients:

  • 8.5 oz broccoli rice
  • 1.5 tablespoon of coconut oil
  • 3 eggs
  • 1 tablespoon of coconut flour
  • 4 oz smoked salmon
  • 2 avocados
  • flax seeds to garnish
Instruction
  1. Heat a frying pan with the coconut oil and sauté broccoli rice for a few minutes. It may just be al dente. Let cool a little.
  2. Add the eggs and the coconut flour. Mix well and let stand for a while.
  3. Heat a frying pan and spoon 1 tablespoon of the mixture into the pan if it is hot enough and bake brown. Bake all broccoli toast like this.
  4. Serve with the smoked salmon, flax seeds, tomato, basil and or avocado.

Tried this on July 5th and have been searching for some ready broccoli rice to repeat and perfect it...
NOPE.
So this is it—a humble form of Elvira's perfect Broccoli Toast.
Served on a heated Pillivuyt plate on a Le Jacquard Français linen rose placemat.

Spicy Coconut Split Pea Soup

 When the evenings are getting cooler, it is wholesome to have a spicy, hot soup.
This time I share with you a Spicy Coconut Split Pea Soup
Easy to make and so yummy when served with corn tortilla chips on the side...
Served in our Pillivuyt from France ←(click link) soup bowl and eaten with a silver Alvin Bridal Rose soup spoon.
I've also used our linen with roses French Le Jacquard Français placemats.
This one I made with Trader Joe's Coconut Cream instead of Coconut Milk
~
Ingredients:

454 g dried split peas
3 cloves garlic, chopped
5 cups light tasting vegetable broth (used the low sodium from Trader Joe's)
2 teaspoons of spicy curry powder
½ teaspoon Old Bay Seasoning (will also mention how to make your own!)
½ teaspoon cayenne pepper
1 14–oz can coconut milk or cream if you desire
About 6 jalapeño peppers chopped

Instructions:

Place the rinsed split peas in a heavy bottom soup pot and just cover them with boiling water.
Let them soak for one hour, on the lowest setting—drain.
Place the soaked peas back into the soup pot and add the chopped garlic, broth, curry, Old Bay Seasoning and cayenne pepper. 
Bring the liquid to a gentle simmer and cook till the peas are soft—about one hour.
Stir in the coconut milk or cream and gently heat through and also add the jalapeños.
Serve in a shallow heated bowl and ENJOY

1 tablespoon Celery Salt
2 teaspoons Ground Bay Leaves
2 teaspoons Smoked Paprika
1½ teaspoon Ground Black Pepper
1 teaspoon Ground Mustard
¼ teaspoon Allspice
¼ teaspoon Cayenne
1 pinch of Ground Cinnamon
1 pinch Ground Nutmeg
1 pinch Ground Ginger

Actually I've made my own and keep it in a little container—handy and ready to be used.

Extending the Joy of ROSES

 Guess by now, you all know how much I do love ROSES...
Sadly we no longer have our own roses, but once in a while we enjoy a nosegay.
When doing our usual shopping round in Atlanta at Trader Joe's, Whole Foods Market and Costco wholesale, I grabbed a dozen of these perfect yellow roses.
When this dozen of yellow roses was showing signs of letting down, I salvaged several of the best and placed them inside this Wedgwood Cream Color on Cream Color compote bowl.
Together with a placemat from Le Jacquard Français they looked stunning!
For best light, I went onto our balcony on the round teak table...
Lovely buds that never fully opened!

Roast Beef Canapés

 For our Christmas Party with the Chancel Choir I prepared these: 
The finished ROSES of Roast Beef Canapés...
Did not have any marygold flowers for garnishing as in the magazines photo below.

On a sheet of parchment I put the baguette slices and brushed them with olive oil.
Into the oven for 15 minutes on 370℉
While they cooled down, I made the rosettes.
From the thin sliced ¼ pound of roast beef I started cutting each slice in half.
That was NOT mentioned in the recipe however but I figured this out by looking at the roast beef 'roses'.
Next each half needs to be folded over and then rolled into a roast beef rosette...
With a small butter knife I spread the mayonaise mixture on each crostino.
Fanning out three pieces of arugula on mixture, before placing the roast beef rosettes.
Using the Mason's Patent Ironstone Mandalay tray...
It was fun creating these edible roses!

TACO TIME with recipe

When the weather is colder it is great for having a bite that comes hot from the oven!
Hot and spicy and served with baby arugula...
Placemat is from Le Jacquard Français with Gero Zilmeta 528 Menuet knife and fork.
Using the special Taco Holders and shells from Trader Joe's, I've filled them with grass fed ground beef 93% lean from Whole Foods Market.
Topped with some cheese (for us the lowest sodium content available...)
After 15 minutes in the oven... on 375℉ they're ready to eat!

Silver Mushrooms

 Sure, being immersed into MUSHROOMS there has to be a SILVER ONE!
This is my personal collection on a Le Jacquard Français placemat...
Gold plated silver earrings in the shape of a mushroom; a silver charm with its lamellae beautifully worked in and a silver plated salt & pepper set.

A solid silver mushroom charm, specially designed for the MGA (Mushroom Growers' Association) in connection with the Woman's Own competition. 
Silver-plated salt and pepper pots are also included.
The charm weighs a quarter of an ounce.

Do You Also LOVE Cherries?

SUMMER has so many bonuses for us to INDULGE in!
Do You Also LOVE Cherries as much as I do?
Yummy, freshly washed and one I had to trim back a bit due to a bird's bite maybe.
This is the season for using my Pillivuyt strawberry drainer with under-plate.
Tablecloth is from Le Jacquard Français with roses...

Oh, enjoying a magazine and reaching for refreshing cherries is pure bliss!

Table Setting With Picture Frame Vases and Place Cards

Still regret for not having kept more than 6 of those Delft White Picture Frame Vases... They sold like hot cakes! BUT, I sure love to use them with my Table Setting, together with our silver Place Cards.
We happened to have still some of our white azaleas and together with a sprig of Rosemary, they worked perfect.
Also my French Christofle silver knife rests were put to use.
I've almost sold out on my Spectrenoir... (click the hyperlink).
My extra long French Le Jacquard damask tablecloth with napkins work fine with the additional small oak table added on in the back.
Chargers are French Pillivuyt Sancerre, also available at Replacements.
Our dining room set is solid French oak and also the floor is solid oak planks.
But instead of the Delft White Picture Frame Vase I used a little perfume bottle with silver embellishment, a dear gift from our boss in Italy.
The soup spoons, as well as the dessert spoon are Alvin Bridal Rose (Sterling, 1903) and by now you all know that I love ROSES. Clicking the link you find more pieces by Replacements Ltd.
Our solid silver napkin rings we had made in Indonesia while we lived and worked there.
This Picture Frame Vase is holding 2 Ice Wing Narcissus.

{Cooking Dinner for Twelve at Our Home}

Only one week after we got our new Miele Dishwasher installed I had to prepare a dinner for 12 at our home.
Imagine, cleaning all that mess and having a neat home, shopping for the ingredients and cooking...
Shopping means a 2 ½ hour drive to Atlanta, one way!
This is one table setting, in our dining room for 9.
Tabecloth is French Le Jacquard Français.
And 3 more in our bay window section in the kitchen.
Tablecloth is French Yves Delorme.
Monday, January 25...
At Costco Wholesale we did buy this great and very healthy salad.
It comes with dressing, variety of nuts and seeds!
That helps for making things easier...
These delicious wheat rolls are from Whole Foods Market

Tira-mi-su I made the evening before... A favorite dessert at our home.
I would prepare a German style dinner and as meat choice I had Pork Tenderloin, baked in the oven.
Red potatoes, just pre-boiled and then pan fried.
I did keep them warm in my 30" Miele Convection Food Warming Drawer with dual heating system. drawer in the staircase area.
It is great, getting things out of the way and ready to clean up the cook top and kitchen counter.
From Cost Plus World Market I did have this Red Cabbage Salad from Lowell foods.
And yes, I did for once cover the Le Jacquard Français tablecloth with a soft plastic that I have... This is a HUGE tablecloth, I've added a small table at the end, from the Rose Suite downstairs.
Not easy for ironing such size so this saved me from doing that.
My Pillivuyt Sancerre serving plates combined with Cream Colour on Cream Colour by Wedgwood for salad and later also the bigger round dinner plates for the main course. I kept those in my Miele plate warming drawer...
Cups & saucers from the same Wedgwood Cream Colour on Cream Colour and dessert plates for the Tira-mi-su.
Table setting for 3 in the kitchen.
Often I use the round teak table from the balcony for ourselves, set also in the kitchen.
Here no Wedgwood china is used but instead the Pillivuyt Sancerre dinner plates.
Those Pillivuyt dinner plates also went inside the plate warming drawer for the main course.
   Seltmann Weiden Mirabell White plates for the salad.
I've also learned not to use my French Baccarat crystal but instead a cheaper crystal for glasses...

Flatware is Gero Zilmeta 528 Menuet and for dessert spoons silver Alvin Bridal Rose.
Sorry there are no further photos as it was only Team Vedder that did wait on these guests and no time for snapping any pictures from main course and such.
My French trolley from La Redoute, France that Pieter used in the veranda for creating a little bar...
The Baccarat crystal ice bucket with thong always comes in handy.
So that's my duty for Pieter's Monday Night Club as it is our turn to host the dinner.
The maximum I've done is cooking for 15.

I was sure glad when all was done and I also enjoyed the compliments about the food.
Next day I had severe back pain. That was mainly because that entire week, since our Miele dishwasher got finally installed and working, I had done the cleaning etc.
It is as I said above, for our home and garden, only Team Vedder!
